Francine’s diverse background includes spending over 20 years in the food service industry, beginning as an hourly employee and eventually an operating partner. She continued her career as a food safety subject matter expert working in academia as well as private sector. Her company has performed thousands of food safety inspections for local health departments and the private sector and trained over well over 25,000 individuals in food safety. As an industry thought leader, Francine has been featured as a food safety expert in numerous media outlets, including BBC World Series Radio, Dr. Oz Show, Huffington Post, iHeartRadio, Food Safety News, Food Management Magazine, EATER, Food Fanatics, and Food Service Consultants Society International. She has also authored over 100 published food safety articles.

Donald Smiths has worked as a food safety professional for over 20 years, having performed over 500 food safety audits in over 30 countries around the world. His diverse professional background also includes work as a Consumer Safety Officer for the FDA and the Office of Regulatory Affairs and as a Senior Food Safety Officer at the Department of Defense Health Agency. His accomplishments also include working with members of the Partnership for Food Protection Training and Certification Workgroup to develop the National Curriculum Standards as well as collaborating with international experts and the Codex Committee to review and update the General Principles of Food Hygiene and its HACCP annex.
